Meatloaf

No V-8 in this, but it uses Campbell's soup...I made this while staying with Aunt Sandy and everyone really liked it (Uncle Loren didn't seem to notice the onions, which he doesn't care for)

2 pounds ground beef
1 can tomato soup, divided
one pkg Knorr Vegetable Soup/Dip mix
1/4 cup water
1/2 cup dry bread crumbs or crackers, crushed
several slices bacon
brown sugar

Mix together the ground beef, 1/2 cup soup, dip mix, water and bread crumbs. Place in a 9x13 pan and shape into a 4x8 inch loaf. Lay bacon slices over top. Bake at 350 for one hour. Combine pan juices with remaining tomato soup and 1/4 cup brown sugar. Remove bacon slices (Len will eat these for you) and pour sauce over loaf. Return to oven for 10-15 minutes. Makes about 8 servings. Served with beef flavored Rice-a-Roni and broccoli.
